A saline and mineral white from Languedoc, signature of the Larzac terroir
The estate
Founded in 2003 by Julien and Delphine Zernott, Domaine du Pas de l'Escalette extends over around twenty hectares of terraces at 350 metres above sea level, at the foot of the Larzac plateau in Pégairolles de l'Escalette. This Languedoc estate cultivates regional grape varieties such as Grenache, Carignan, Syrah and Terret Bourret under certified organic and biodynamic farming (FR-BIO-01 and Biodyvin). The altitude gives the wines a remarkable freshness and tension, true signatures of the estate. The minimally interventionist winemaking approach favours the authentic expression of the limestone terroir.
The vineyard
The vines dedicated to this Les Clapas Blanc cuvée are planted on the foothills of the Larzac plateau, in the valleys of Pégairolles de l'Escalette and Lauroux. This terroir is made up of deep clay-limestone soils and limestone scree. The vineyard combines old vines over 50 years old, trained in goblet, with new plantings from massal selections.
Winemaking and ageing
The grapes from this 2023 vintage are hand-harvested and then directly pressed. Alcoholic fermentation takes place in barrels and in 13-hectolitre truncated wooden vats with indigenous yeasts. Malolactic fermentation is carried through to completion. The ageing of this Languedoc wine takes place in truncated vats.
