Tasting

Appearance
The wine reveals a pale to light yellow hue, enhanced by subtle pale green highlights.

Nose
Wonderfully elegant, the nose exudes graceful floral and fruity notes blending citrus and stone fruits. The whole is heightened by delicate spicy touches evoking vanilla, lemongrass and clove.

Palate
Harmonious and dynamic, the palate offers a superb balance between freshness, fruity concentration and acidity. It unfolds a cascade of fruit and spice flavours, supported by a silky texture. The finish is remarkably long, marked by chalky minerality and a noble hint of bitterness.

Food and wine pairings

This white wine pairs beautifully with seafood, delicate fish such as sole meunière, or poultry in creamy sauces. It also perfectly complements mushroom risottos, refined vegetarian dishes as well as soft cheeses such as Brie or Camembert.

Serving and cellaring

To fully appreciate the complexity of this wine, it is recommended to serve it at a temperature between 10 and 13°C.

The estate

Founded in 1825 by Pierre Faiveley in Nuits-Saint-Georges, Domaine Faiveley stands as a true institution in Burgundy. Now led by the seventh generation, embodied by Erwan and Eve Faiveley, the estate oversees a vast vineyard spread across the region's most prestigious terroirs. Combining respect for family traditions with technical modernity, the domaine distinguishes itself through a strong environmental commitment, aiming to express the authenticity of each plot with remarkable precision.

The vineyard

The plot from which this wine is born lies within the Mercurey appellation, in the south of the Côte Chalonnaise. The vines flourish on clay-limestone soils. Benefiting from an ideal eastern and south-eastern exposure, this terroir allows deep rooting, drawing a unique minerality while promoting optimal berry ripening.

The vintage

The 2023 vintage was marked by steady and mild weather conditions, sparing the vines from extreme heat. Sufficient water reserves in spring, followed by a few summer storms, helped avoid any water stress. These ideal conditions favoured a gradual and balanced ripening, resulting in a particularly healthy harvest.

Winemaking and ageing

The berries destined for the Mercurey Village "Le Vallon Blanc" 2023 are harvested and hand-sorted before undergoing gentle pressing. Fermentation is carried out using indigenous yeasts. Ageing then extends over sixteen months, divided between stainless steel tanks with lees stirring, French oak barrels of second or third use, and a small proportion of new barrels, thus preserving all the freshness of the fruit.
