The estate
Founded in 1979, Domaine Guffens-Heynen is an essential benchmark of southern Burgundy. Located in the Mâconnais, this estate of approximately 5.5 to 5.65 hectares is still run today by its founders, Maine and Jean-Marie Guffens-Heynen. Renowned for their artisanal approach and their rejection of convention, the owners craft white wines of exceptional concentration. Thanks to extremely low yields and natural viticulture, the estate elevates its cuvées to the level of the greatest Burgundy crus, offering unique expressions sought after throughout the world.
The vineyard
The vineyard behind this Burgundy wine extends across the slopes of several Mâconnais villages, including Pierreclos, Vergisson and Davayé. The vines are farmed as naturally as possible, with no chemical products whatsoever, in favour of regular ploughing and manure fertilisation. Yields are drastically controlled through very severe pruning, reducing production to a third of the usual volumes. This method encourages the development of tiny bunches, ensuring optimal concentration of flavour and substance.
Winemaking and ageing
The grapes are harvested by hand, in successive passes, to pick the berries at their ideal ripeness. The Bourgogne "Deuxièmes Jus" 2025 is distinctive in that it comes exclusively from the second static pressing of all the estate's grapes and appellations, gently extracted using a vertical press. Fermentation takes place without the addition of exogenous yeasts. The wine is then aged in oak barrels, resting at length on its lees, all without unnecessary filtration.
