Tasting
Appearance
The wine reveals a luminous golden-yellow hue, adorned with bright, clear reflections.
Nose
Intense and complex, the bouquet opens on aromas of ripe fruit such as yellow peach, pear and candied citrus. With aeration, it reveals notes of white flowers, frangipane, brioche and toasted hazelnut, underscored by a minerality reminiscent of damp chalk and a subtle smoky touch.
Palate
The attack is ample and enveloping, introducing a dense and energetic material. The mid-palate unfolds flavours of yellow fruits and dried fruits, perfectly balanced by a beautiful chalky tension. The satiny texture stretches towards a long, saline and persistent finish.
Food and wine pairings
This white wine pairs ideally with refined dishes such as roasted turbot, Bresse poultry with morels or golden sweetbreads. It also wonderfully accompanies noble fish in creamy sauce as well as goat cheeses such as Crottin de Chavignol or Chabichou.
Serving and cellaring
For an optimal tasting of this wine, it is advisable to serve it at a temperature between 12 and 13°C, after decanting for one to two hours. This powerful and complete wine boasts excellent cellaring potential.
Discovering Domaine Guffens-Heynen
The estate
Founded in 1979 by Maine and Jean-Marie Guffens-Heynen, the estate is located in Sologny, in the Mâconnais region of Burgundy. Still led today by Jean-Marie Guffens, this small property of around 5.3 hectares has established itself as a benchmark of the region. The estate stands out for its demanding artisanal approach, marked by extremely low yields and harvests carried out at optimal maturity. This philosophy makes it possible to produce wines of great purity, combining richness and mineral tension, recognised among the finest expressions of Chardonnay.
The vineyard
The grapes for this cuvée come from the Pouilly-Fuissé appellation, more precisely from the western slope of the Roche de Vergisson. The vineyard rests on three highly calcareous terroirs at altitude, interwoven with blue marls. The vines benefit from varied exposures, ranging from south to north-west, and are cultivated according to natural principles with drastically limited yields. The harvest is carried out by hand, often in several passes, in order to pick the berries at their ideal point of ripeness.
The vintage
This vintage is characterised by a growing cycle that led to a very late harvest. Yields were particularly low, which made it possible to obtain berries of extreme concentration and richness for the year.
Winemaking and ageing
The process begins with a gentle pressing of the bunches. Fermentations are slow and take place in oak barrels. The wine then benefits from extended ageing on fine lees, accompanied by regular bâtonnage. The moderate use of new oak preserves the purity of the fruit while lending a creamy texture and beautiful aromatic complexity.
