Tasting Notes

Appearance
The wine reveals an intense, bright ruby red colour.

Nose
The bouquet first opens with delicate woody and toasted notes. On aeration, it reveals a lovely freshness carried by aromas of crisp black fruits such as blackcurrant and blackberry, red currant, along with touches of violet, spice, earth and undergrowth.

Palate
Harmonious and full-bodied, the palate offers a lovely balance between power and liveliness. Supported by silky, velvety tannins, it unfolds intense flavours of juicy black fruits. The finish, long and refined, stands out for its lovely tension and a slight youthful austerity.

Food and Wine Pairings

This red wine pairs beautifully with fine cuts of beef such as a rib steak or a bone-in rib of beef, lamb, as well as feathered or furred game. It will also complement full-flavoured fish prepared in a red wine sauce, or mature Burgundian cheeses such as Époisses or Ami du Chambertin.

Serving and Cellaring

For an optimal tasting experience, it is recommended to serve this Gevrey-Chambertin Village "Vieilles Vignes" 2021 between 16 and 18°C, taking care to decant it or open it in advance given its youth. Ready to enjoy from now, this wine has the ageing potential to evolve until around 2034.

The Elegance and Power of a Gevrey-Chambertin Wine

The Estate

Descended from a line of winegrowers spanning four generations, the Humbert family has been cultivating the vine with passion in Burgundy, France. Domaine Humbert Frères truly took off at the end of the 20th century under the impetus of brothers Frédéric and Emmanuel. Located in Gevrey-Chambertin, this discreet 7-hectare estate is today co-managed by Emmanuel Humbert and his nephew Pierre-Yves, representing the new generation. HVE 3 certified, the estate stands out for its highly considered approach and its exclusive specialisation in the production of red wines, combining tradition with respect for the terroir.

The Vineyard

The grapes come from a selection of the estate's oldest vines, located in the excellent terroirs of Gevrey-Chambertin. More specifically, the plots are found in the lower sections of the lieux-dits Estournelles-Saint-Jacques and Aux Etelois, in the immediate vicinity of the renowned Griotte-Chambertin grand cru. The vines thrive on high-quality clay-limestone soils, benefiting from an ideal microclimate that gives the berries remarkable depth and structure. Viticulture here is sustainable, and the harvest is carried out by hand.

Winemaking and Ageing

Following a hand harvest and partial destemming, the Gevrey-Chambertin Village "Vieilles Vignes" 2021 is vinified in temperature-controlled vats using indigenous yeasts. The process includes a long extraction to reveal the full depth of the fruit. Malolactic fermentation then takes place in barrels. Ageing continues for 12 to 18 months in French oak barrels, including a proportion of new wood. To preserve all its complexity and texture, the wine is bottled without any fining or filtration.
