Tasting

Nose
Particularly expressive, the bouquet reveals aromas of white flowers such as acacia, mingled with notes of white-fleshed fruits and pure citrus. Subtle hints of almond and a marked minerality, evoking crushed stone, complete this aromatic palette.

Palate
Displaying a beautiful volume, the palate stands out for its tension and vivacity. The length is remarkable, carried by a strong mineral grip and delicate bitter notes on a drawn-out, mouth-watering finish.

Food and wine pairings

This white wine pairs wonderfully with fine fish such as turbot with beurre blanc, noble shellfish like pan-seared scallops, or a roast poultry served with a light mushroom sauce. It also matches very well with cooked pressed cheeses such as a young Comté.

Serving and cellaring

To fully appreciate this great wine, it is recommended to serve it at a temperature between 11 and 13°C. A light decanting can be beneficial in its youth. This wine for cellaring will continue to evolve favourably until around 2034.

The elegance of a white wine crafted by a great family estate in Burgundy

The estate

Heir to a long line of winegrowers whose origins date back to the 16th century, the Domaine Jacques Carillon was officially founded in 2010. Located in Puligny-Montrachet, in the heart of Burgundy, this artisanal 5-hectare estate is now run by Jacques and Sylvia Carillon. The couple favours an environmentally respectful approach, certified High Environmental Value (HVE). Renowned for its technical mastery and constant pursuit of purity, the estate produces straight, taut wines deeply marked by minerality, establishing itself as an essential benchmark of its appellation.

The vineyard

This premier cru comes from a 0.55-hectare plot located to the north of the village of Puligny-Montrachet, on the border of the Meursault appellation. Planted in 1973, these old vines thrive on a terroir composed of limestone and marl, rich in stones and chalk, offering excellent drainage. The vineyard is managed under sustainable viticulture, without the use of herbicides, with mechanical soil work to preserve the plant's natural balance.

Winemaking and aging

The philosophy in the cellar is based on minimal intervention to let the terroir express itself. Fermentations take place in oak barrels. Aging then continues on lees for around twelve months, with a moderate proportion of 15 to 20% new barrels. Finally, the wine is racked and rests for a further six months in tanks to perfect its harmony before bottling.
