Tasting notes
Colour
The colour reveals a bright, limpid pale gold hue, occasionally flecked with subtle green tints.
Nose
The aromatic bouquet opens with citrus notes such as lemon zest and white grapefruit, accompanied by green apple and delicate floral touches of acacia. A mineral thread reminiscent of wet stone and flint intertwines with aromas of ripe stone fruit, such as peach and pear, alongside subtle spiced pastry notes.
Palate
The palate offers beautiful definition with flavours of green apple, ripe pear and citrus. The acidity is lively and precise, underpinned by a constant mineral salinity. The texture reveals a slight unctuousness leading into a lingering finish marked by notes of lemon, wet stone and a discreet honeyed touch.
Food and wine pairing
This white wine pairs beautifully with seafood and shellfish such as oysters, scallops or lobster. It also goes very well with white fish in beurre blanc sauce, white meats like veal or poultry in cream sauce, as well as dishes based on fresh vegetables.

The estate
Founded in 1880 in Beaune, the family house expanded into the Yonne in 1968. Today, the Drouhin Vaudon estate stands as a benchmark in Burgundy, France. Led by the fourth generation, with Frédéric Drouhin at the helm alongside Philippe, Véronique and Laurent, the estate spans around forty hectares. A pioneer in the region, this estate is recognised as the largest Chablis holding entirely farmed under biodynamic principles, reflecting a deep commitment to environmental stewardship and the authentic expression of its terroirs.
The vineyard
Located on the right bank of the Serein, the Mont de Milieu climat spans forty-four hectares within the Chablis appellation. This terroir enjoys an optimal south-southeast exposure and protection from northerly winds. The vines thrive on homogeneous Kimmeridgian clay-limestone soils, rich in small white pebbles and marine fossils. The vineyard is farmed according to biodynamic principles, with deliberately limited yields and soil work alternating between animal and mechanical traction.
The vintage
2022 began with a mild winter followed by early budbreak at the end of March, raising some concerns about frost, which ultimately had little impact on the vines. Spring proved particularly warm, encouraging rapid flowering at the end of May. The summer period was marked by prolonged drought, significantly limiting disease pressure. Harvest began at the end of August under highly favourable weather conditions.
Winemaking and ageing
The grapes are hand-harvested in perforated crates and then carefully sorted. Whole-bunch pressing is carried out slowly using a pneumatic press, with the last juices separated out to retain only the finest quality. Fermentation of this Chablis 1er Cru "Mont de Milieu" 2022 takes place in stainless steel tanks. Ageing continues in the same vessels on fine lees for eight to ten months, with regular bâtonnage.
