Nose
The nose opens with delicate aromas of white fruit such as pear and peach, harmoniously intertwined with notes of citrus and white flowers. Subtle touches of fresh hazelnut and toasted bread from the ageing process add finesse and complexity to the bouquet.
Palate
The attack is lively and clean, revealing a finely chiselled, precise palate. The natural acidity is perfectly balanced by a pleasant roundness from ageing on the lees, leading to a long, mineral finish with saline accents.
Food and wine pairing
This white wine pairs beautifully with delicate fish served with a beurre blanc sauce, pan-seared scallops or white meats in a creamy mushroom sauce. It will also enhance a seasonal risotto or uncooked pressed cheeses such as a young Comté.
Serving and cellaring

The estate
Founded in 1859 by Jean-Edouard Dupard, the Jean Chartron estate is a historic name in Puligny-Montrachet, in the heart of Burgundy. Now run by Jean-Michel Chartron, the fifth generation, and his sister Anne-Laure, the estate covers 14.5 hectares of vines. It stands out for its exceptional heritage, which includes prestigious monopoles, and for its rigorous approach to sustainable viticulture. Its constant pursuit of the pure expression of terroir makes this producer an essential reference for lovers of great white wines.
The vineyard
This wine comes from a plot in Savigny-Les-Beaune located on a clay-limestone slope, on the edge of the Bois de Noël and the Bois de Chenôve. This proximity to the forest creates a regulating microclimate that preserves the freshness of the grapes. The vines, with an average age of 40 years, are farmed using sustainable viticulture. The estate favours natural grass cover in winter, the use of compost and Poussard pruning to ensure the longevity and health of the vines.
Vinification and ageing
The hand-harvested grapes are rigorously sorted. Vinification takes place in oak barrels, with a measured proportion of 25% new oak and 75% barrels previously used for one to five vintages. The wine is then aged on fine lees for 12 months in barrels, followed by 4 months in tanks to refine the balance and precision of the cuvée.
