Tasting

Colour
The colour reveals a brilliant pale yellow hue, enhanced by delicate silvery glints. Its crystalline clarity reflects great purity.

Nose
Showing great elegance, the bouquet opens with subtle floral notes of acacia. It then evolves towards aniseed notes of liquorice, a signature of its terroir, before revealing lush touches of candied lemon.

Palate
The attack is lively and precise, carried by a fine acidity with hints of citrus zest and minerals. The mid-palate offers a crystalline and refined texture, unveiling flavours of white-fleshed fruit such as peach and nectarine, mingled with iodine nuances. The finish lingers with remarkable persistence, leaving a pleasant sensation of mineral freshness.

Food and wine pairing

This white wine pairs beautifully with fresh oysters, lobster quenelles or grilled salmon. It also enhances dishes seasoned with mild spices or citrus, as well as white meats and delicate fish served with a creamy sauce, such as sole meunière or veal with mushrooms. It is also perfect enjoyed as an aperitif.

Service and storage

For optimal tasting, it is recommended to keep this wine in a dark place, at a temperature of around 10 to 12°C. This Chablis 1er cru "Vaulorent" 2023 can be enjoyed now, but will reach its peak around 2027 and will continue to evolve favourably until approximately 2030.

This wine has an alcohol content of 13%. It is certified organic and biodynamic, an approach illustrated by the small ladybird on the label.

The pure and mineral expression of a great white Chablis

The estate

Officially founded in 1974 by Jean-Marc Brocard, the eponymous estate has established itself as a key reference in Burgundy. Now run by his son, Julien Brocard, the estate oversees a vast vineyard of around 240 hectares. A pioneer of sustainable viticulture in the region, the Jean-Marc Brocard estate stands out for its deep commitment to organic and biodynamic farming. Combining respect for tradition with technical innovation, this family house has become one of the leading players in its appellation, producing wines renowned for their fidelity to terroir and their great purity.

The vineyard

The sole Premier Cru located on the same hillside as the Grands Crus of Chablis, the Vaulorent climat benefits from an ideal south-west exposure. The vines, planted between 1955 and 1975, thrive on shallow Kimmeridgian soils, rich in white marl and marine fossils. Cultivated according to the principles of biodynamic and organic farming, this terroir receives meticulous attention, including innovative practices such as vine agroforestry to preserve biodiversity and soil health.

The vintage

2023 offered favourable climatic conditions, allowing grapes of generous ripeness to be harvested. This growing cycle gave rise to wines combining a lovely fruity expression with preserved, refreshing acidity.

Winemaking and ageing

As soon as they arrive at the winery by gravity, the grapes undergo a cold enzymatic settling process. Alcoholic fermentation begins naturally thanks to indigenous yeasts, followed by spontaneous malolactic fermentation. This Chablis 1er cru "Vaulorent" 2023 is then aged on lees for 14 to 15 months in oak foudres. The estate's philosophy favours minimal intervention, avoiding fining and limiting filtration to preserve the wine's full complexity.
