Tasting
Appearance
The wine reveals a deep ruby hue with garnet and violet highlights, displaying a lovely brilliance.
Nose
Rich and remarkably pure, the nose releases aromas of red and black fruits (raspberry, wild strawberry, blackcurrant, morello cherry) intermingled with notes of spice, liquorice and orange peel, along with subtle floral touches and hints of garrigue.
Palate
Lithe and delicately tangy, the palate charms with its supple texture and crunchy tannins. Vibrant and fruity, it flows seamlessly into a long, refreshing finish.
Food and wine pairings
This red wine pairs wonderfully with Mediterranean dishes such as tagine, moussaka, lamb chops, or even spiced beef tataki. It will also go very well with roast white meats.
Serving and cellaring
To enjoy the "Autour du Cinsault" 2025 cuvée at its best, we recommend decanting the wine briefly and serving it at a temperature of around 15°C. This vintage can be enjoyed in its youth and will develop favourably until around 2030.
The Elegance and Freshness of a Red Wine from the Languedoc
The estate
Officially founded in 2008 by Jean-Baptiste Granier and Olivier Jullien, Les Vignes Oubliées is a singular project located in Saint-Jean-de-la-Blaquière, in the Languedoc. Today run by Jean-Baptiste Granier, a passionate négociant-winemaker, the estate stands out for its commitment to preserving old, neglected high-altitude parcels. In close collaboration with a collective of local growers, the estate celebrates this unique viticultural heritage. The wines, renowned for their freshness, reflect a philosophy deeply respectful of the environment and of the exceptional terroirs of the Larzac foothills.
The vineyard
The grapes come from the high-altitude terroirs of the commune of Saint-Privat, on the foothills of the Larzac, in the former Coteaux du Languedoc zone. This vineyard is distinguished by its poor, well-draining soils, composed mainly of sandstone and schist, with some clay-limestone nuances. The old vines are cultivated according to the principles of sustainable viticulture, without synthetic products or weedkillers. This cool terroir, subject to significant temperature variations between day and night, allows for deep rooting and preserves the natural acidity of the berries.
Winemaking and ageing
The production of the "Autour du Cinsault" 2025 cuvée begins with hand harvesting, followed by a very strict selection in both the vineyard and the cellar. After partial destemming, maceration lasts 15 to 20 days under strict temperature control to preserve the brightness of the fruit. The wine is then aged for nearly 12 months. Around 20% of the blend is aged in demi-muids and barrels in the heart of a natural cave offering constant coolness and humidity, while the remainder rests in neutral vessels.
Grape varieties
This wine is predominantly made up of Cinsault, complemented by other Mediterranean grape varieties such as Syrah and Grenache.
