Tasting

Appearance
The robe reveals an intense ruby hue, adorned with bordeaux and garnet reflections.

Nose
The bouquet is complex and evolving. It exudes aromas of ripe black fruits such as blackcurrant and blackberry, mingled with notes of fine leather, sweet spices, violet and pepper, all underscored by a delicate touch of garrigue.

Palate
The attack is rich and fruity, opening onto an ample and powerful texture. The mid-palate reveals a digestible structure with firm yet elegant tannins. The long and lingering finish stretches over notes of liquorice, herbes de Provence and blood orange, enhanced by a beautiful saline and chalky thread.

Food and wine pairings

This red wine is the ideal companion to characterful meats such as a rack of lamb, a beef sirloin or game dishes like a haunch of venison. It also pairs wonderfully with regional slow-cooked dishes, herb-infused Mediterranean cuisine or a platter of aged hard cheeses.

Serving and cellaring

It is recommended to decant this wine in its youth to release its full aromatic complexity. This long-ageing wine can already be enjoyed and will drink well until around 2043.

The estate

Founded in 1985 by Olivier Jullien, the Mas Jullien estate quickly established itself as a leading force in the qualitative revival of the Languedoc. Located north of Montpellier, this independent family property cultivates around twenty hectares of vines. Still led by its founder, Olivier Jullien, now supported by Paul-Clément Tesson, the estate stands out for its environmentally respectful approach and its fierce determination to express the diversity of its terroirs. The wines produced are renowned for their freshness, purity and remarkable ageing potential.

The vineyard

The plots are located around the village of Jonquières, at the heart of the Terrasses du Larzac appellation. The vineyard rests on a geological mosaic composed of limestone pebbles on the upper terraces of the Hérault river, along with clay-limestone, sandstone and siliceous sands on the last foothills of the plateau. The vines, around 35 years old, are cultivated according to organic and biodynamic principles, with deep respect for soil life, the plant and the surrounding biodiversity.

Winemaking and ageing

Harvesting is carried out exclusively by hand. After complete destemming, fermentations are initiated by indigenous yeasts. Vatting lasts between 15 and 25 days with gentle extractions through punching down and pumping over at controlled temperatures. Ageing then takes place over a period of around 18 months, split between 600-litre demi-muids and large foudres, in order to refine the tannic structure while preserving the brightness of the fruit.

Grape varieties

The blend is dominated by Carignan, complemented by Mourvèdre and Syrah.
