Tasting

Appearance

Palate
The palate offers a beautifully harmonious balance, carried by an invigorating freshness. It unfolds a deeply mineral structure, enriched with delicate hints of hazelnut.

Food and wine pairings
Ideal as an aperitif, this white wine pairs wonderfully with delicate-fleshed fish, shellfish such as shrimp, or simply prepared poultry. It also enhances savoury mushroom dishes as well as fresh goat cheeses.

Serving and cellaring
To fully appreciate all the complexity of the "Les Sauvagères" 2024, it is recommended to serve it at a temperature between 12 and 14°C.

Other characteristics
This dry white wine from France is produced without malolactic fermentation or bâtonnage, thus preserving all its natural acidity and aromatic purity.

The mineral expression of a white wine from Saint-Péray

The estate
Founded in 1834, the Paul Jaboulet-Aîné House is an emblematic figure of the Rhône Valley. The estate oversees a vineyard of approximately 125 hectares spread across prestigious appellations. Acquired in 2006 by Jean-Jacques Frey, the property embarked on a major ecological transition, obtaining certifications in organic farming and then in biodynamics. Today, following Caroline Frey's withdrawal, management is provided by her sister Delphine Frey Prost and Grégory Joannes, thus perpetuating a philosophy combining respect for the terroir and sustainable practices.

The vineyard
From the tiny Saint-Péray appellation, this cuvée comes from vines planted in the early 2000s. The terroir is distinguished by gentle slopes surrounding the Crussol hill. The soils, particularly warm and stony, feature a rare limestone dominance for the region, blended with clay-limestone and granitic formations. This singular geology compels the vines to draw their nutrients deeply, giving the grapes a very pronounced saline and mineral signature.

Winemaking and aging
The harvest of "Les Sauvagères" 2024 is carried out by hand. Whole clusters are gently pressed, then the juice rests in cold conditions for two days for natural settling. Alcoholic fermentation extends over ten days. Aging lasts nine months and is divided between three distinct vessels: one third in French oak barrels, one third in stainless steel tanks and the final third in concrete eggs, promoting harmonious integration.
