Tasting

Nose
Of great purity, the bouquet reveals intense citrus aromas that intertwine with deep limestone and chalky notes, reminiscent of flint.

Palate
The attack is lively and straight, carried by a beautiful refreshing acidity. The mid-palate reveals a very clear mineral expression, which extends at length towards a saline and chalky finish of remarkable persistence.

Food and wine pairings
This cuvée pairs wonderfully with seafood. It will ideally accompany seafood platters, oysters, shellfish or fine-fleshed fish, whether served grilled or as tartare.

Serving and cellaring
To fully appreciate the Chablis 1er cru "Côte de Léchet" 2023, it is recommended to serve it at a temperature between 10 and 12°C. This white wine has a beautiful structure allowing it to evolve in the cellar and to be enjoyed until around 2028.

The pure and mineral expression of a great Chablis by Simonnet-Febvre

The estate
Founded in 1840 by Jean Febvre, the Simonnet-Febvre House is a historic institution of Burgundy, established in the Chablis vineyard and the Grand Auxerrois. Acquired in 2003, it is currently owned by the famous Maison Louis Latour, while retaining its stylistic independence under the direction of Paul Espitalié. This singular brand stands out for its historic expertise in sparkling wines and its mastery of still wines. With a vineyard of around twenty hectares, the estate is today distinguished by its growing commitment to organic viticulture and the precise expression of its terroirs.

The vineyard
The vines giving birth to this cuvée flourish on the left bank of the Serein, at the heart of the Chablis appellation. The terroir of the Côte de Léchet benefits from a beautiful south-east exposure favouring optimal and early ripening. The vines, on average 35 years old, plunge their roots into very poor and stony Kimmeridgian soils, composed of marl and limestone. These geological conditions naturally limit the vigour of the plant and forge the deeply mineral identity of the cru.

Vinification and ageing
The making of the Chablis 1er cru "Côte de Léchet" 2023 is carried out exclusively in stainless steel tanks in order to preserve the brightness and aromatic purity of the fruit. Fermentation takes place under rigorously controlled temperatures, maintained between 18 and 20°C. This is followed by an extended ageing on lees lasting ten to twelve months, still in stainless steel tanks, thus bringing an extra layer of complexity and a delicate texture to the wine.

This wine is made from Chardonnay.
