Simonnet-Febvre : Chablis Grand cru "Les Clos" 2021

A very cool, stony Chablis in which the chalky minerality is far more expressive than the fruit; the latter slowly emerges as the wine flows over the palate, constantly expanding. Super-stony finish that goes on and on. Needs a bit more time in bottle to show its best, but already so pristine. Drinkable now, but best from 2025.
