Appearance
The wine unveils a pale yellow hue, both intense and bright.
Nose
The nose reveals a complex bouquet blending orchard fruit aromas, such as pear and green apple, with notes of citrus and white flowers. A mineral dimension expresses itself through subtle smoky, iodine and flinty touches.
Palate
On the palate, the wine offers a generous, enveloping texture, perfectly balanced by a vibrant acidity that gives it beautiful tension. The long, vibrant finish stands out for its salinity and slightly chalky texture.
Food and wine pairings
This wine pairs ideally with seafood such as oysters or clams, as well as with meaty fish like roasted turbot or braised monkfish. It also wonderfully accompanies white meats in cream and mushroom sauces, or hard cheeses such as an aged Comté.
Serving and cellaring
To fully appreciate the Pouilly-Fuissé Village "Haut de la Roche" 2025, it is recommended to serve it at a temperature of around 12°C, after allowing it to breathe for an hour in the bottle or gently decanting it. With fine potential, this wine can be cellared for around ten years.
The pure expression of a Mâconnais Chardonnay by Maison Verget
The estate
Founded in 1990 by Jean-Marie Guffens-Heynen, its current owner, the merchant house Verget is based in Sologny, at the heart of Burgundy. A true model of bespoke négoce, the estate stands out for its demanding approach: it exclusively purchases carefully selected grapes from partner winegrowers. Under the technical direction of Julien Desplans, Verget crafts wines of great precision, thereby helping to showcase the richness and diversity of the Mâconnais terroirs through distinctive, vibrant cuvées.
The vineyard
This Pouilly-Fuissé wine comes from vines located on the upper section of the Roche de Vergisson, at more than 400 metres of altitude. This singular terroir, with south-eastern exposure, rests on extremely thin, stony and highly calcareous soils. The vineyard is managed according to the principles of sustainable agriculture, and the harvest is carried out exclusively by hand in order to preserve the integrity of the berries.
Vinification and ageing
The creation of the Pouilly-Fuissé Village "Haut de la Roche" 2025 is based on slow and gentle pressing. Fermentations take place spontaneously thanks to indigenous yeasts. The wine then benefits from around nine months of ageing on the lees in oak barrels, a quarter of which are new, bringing density and aromatic refinement without masking the brightness of the fruit.
