Tasting Notes
Appearance
This wine reveals a pale yellow to golden hue, enhanced by subtle greenish glints in its youth.
Nose
The aromatic bouquet opens with a rich blend of orchard yellow fruits, citrus zest and white flowers. With aeration, indulgent notes of fresh butter, hazelnut, honey and toasted bread emerge, underpinned by a delicate mineral touch.
Palate
The attack is rich and creamy, offering fine volume. The balance is perfectly mastered thanks to a chalky mineral tension that brings precision and freshness. The finish is persistent, delicately savoury and saline.
Food and Wine Pairing
This white wine pairs beautifully with shellfish such as lobster or langoustines, as well as with fine fish served in a beurre blanc sauce. It also enhances creamy white meats, such as Bresse chicken or veal sweetbreads with morels, and pairs perfectly with aged cheeses like Comté or Beaufort.
Serving and Cellaring
To fully reveal its complexity, it is advisable to wait a few years. This 2024 vintage will show its full potential after five years in the cellar and can be enjoyed until around 2032.
A Great White Burgundy from Vincent Girardin
The Estate
Born of a long winegrowing lineage in Burgundy, the story begins in 1980 when Vincent Girardin took over two hectares of vines. However, Maison Vincent Girardin was officially established in 1992 in the heart of the Côte de Beaune. Sold in 2012, the estate now belongs to the Compagnie des Vins d'Autrefois. Under the technical direction of Éric Germain, the estate continues to uphold a Très Haute Couture philosophy. This artisanal approach favours respect for terroir, natural viticultural practices and minimal-intervention winemaking, resulting in wines of exceptional aromatic purity.
The Vineyard
Located in the prestigious commune of Meursault, this terroir benefits from a cool continental climate. The vines, around fifty years old, are deeply rooted in a geological mosaic combining old Callovian limestone bedrock with Argovian marls. This duality of soils gives the grapes both mineral tension and richness of texture. The vineyard is managed according to environmentally friendly principles, excluding any herbicides or insecticides, using local natural composts and high trellising to optimise photosynthesis.
The Vintage
2024 was marked by particularly challenging weather conditions. The growing cycle had to contend with episodes of spring frost, followed by humid weather that favoured strong mildew pressure. These climatic constraints demanded meticulous, constant work in the vineyards, resulting in reduced yields. Nevertheless, for the most rigorous winegrowers, these low yields allowed for beautifully concentrated berries.
Winemaking and Ageing
Following manual harvesting and a rigorous double sorting, the bunches undergo gentle pneumatic pressing. Alcoholic and malolactic fermentation take place in 500-litre French oak barrels, with only 10% new wood, using indigenous yeasts. Ageing continues on fine lees for 15 months, without any lees stirring, in order to preserve the purity of the fruit. Finally, bottling is carried out according to the lunar calendar, following light fining and gentle filtration.
