The elegance of a great Burgundy Chardonnay crafted by Vincent Girardin
The estate
Founded in 1992 by Vincent Girardin, this renowned House is based in Meursault, in the heart of Burgundy. Today, the estate belongs to the Compagnie des Vins d'Autrefois, which has managed to preserve the identity and standards of this prestigious brand. With a vineyard of approximately 33 hectares, the domaine stands out for its deep respect for the terroir. Under the technical direction of Éric Germain, the estate continues to establish itself as an essential reference for lovers of great white wines.
The vineyard
The "Les Combettes" climat is one of the three most prestigious terroirs in the commune of Puligny-Montrachet. Ideally located to the north of the village, in the immediate vicinity of Meursault, this plot rests on brown limestone soils overlying hard Jurassic limestone. The vines, averaging 30 years of age, are tended with great care using Guyot Poussard pruning. Rigorous green work, including disbudding, trellising and topping, is carried out to ensure the quality of the grapes.
Winemaking and aging
The making of the Puligny-Montrachet 1er Cru "Les Combettes" 2024 begins with manual harvesting accompanied by meticulous sorting directly on the vines. After light crushing and a gentle pneumatic pressing, the must undergoes a light settling. Alcoholic and malolactic fermentations start naturally thanks to indigenous yeasts and bacteria. The wine is then transferred to 228-litre French oak barrels, 15% of which are new. Aging continues on fine lees for 18 months, without any bâtonnage. Finally, one month before bottling, the wine is racked into vats, then undergoes a light fining and gentle filtration.
