Tasting notes
Colour
This white wine from France reveals a pale yellow hue with subtle green and silvery reflections, offering a lovely luminosity.
Nose
The bouquet proves refined, opening with citrus notes such as lemon zest, mingled with white-fleshed fruits like peach and pear. With aeration, floral touches of acacia emerge, underpinned by a mineral backbone evoking chalk and sea spray.
Palate
The attack is lively and precise. The mid-palate offers pleasant volume with flavours of white fruits and citrus. The long, persistent finish is distinguished by a mineral, saline and stony signature.
Food and wine pairing
This wine pairs perfectly with oysters, scallops or mussels. It also complements grilled white fish and shellfish, as well as dishes such as asparagus risotto. White meats in cream sauce or cheeses like fresh goat's cheese and young Comté will also enhance this cuvée.
Service and storage
To fully enjoy this Chablis 2023, it is recommended to serve it at a temperature of between 12 and 14°C, opening the bottle around half an hour before tasting. This wine can be enjoyed from 2025 and will continue to evolve, drinking well until around 2030.
The mineral expression of Chablis terroir by domaine William Fèvre
The estate
Founded in 1959, domaine William Fèvre is a landmark figure in the Burgundy region. Spanning 70 hectares, the estate has established itself through its respect for terroir. Led by Didier Séguier since 1998, the domaine is renowned for its environmental approach, certified organic. Since January 2024, the current owner has been the Domaines Barons de Rothschild Lafite group. This transition ensures continuity of a philosophy centred on purity, further consolidating the reputation of these wines.
The vineyard
The vines dedicated to this Chablis span approximately 38 hectares. They are planted on steep slopes overlooking the Serein river, characterised by Kimmeridgian soils. This geology consists of an alternation of marl and limestone rich in marine sediments and fossilised oyster shells. The vines, averaging more than 40 years of age, are carefully tended, with harvesting carried out by hand.
The vintage
The year began with a mild, dry winter, followed by a few frosts in April that had little impact. May, warm and dry, encouraged rapid growth. Summer was marked by an alternation of warm spells and rainfall, leading to slight water stress in August. Harvesting began in early September amid intense heat, yielding a generous crop.
Winemaking and aging
After harvesting, the grapes undergo a short pneumatic pressing, followed by light static settling. Fermentation of this Chablis 2023 takes place mainly in stainless steel tanks. Aging extends over 10 to 12 months on fine lees. A small proportion, representing 5 to 10% of the volume, is aged for 5 to 6 months in used French oak barrels before being blended back into the tanks.
