    Tasting

    Appearance
    This white wine reveals a pale-hued robe, enhanced by sparkling reflections typical of the great wines of its region.

    Nose
    The aromatic bouquet is both powerful and refined. It releases seductive notes of ripe yellow fruits and delicate floral touches, all supported by a pronounced minerality reminiscent of damp chalk.

    Palate
    The attack is generous, fleshy and full of charm. The palate offers a rich, round texture that balances perfectly with remarkable liveliness. The whole stretches out on a long, deeply mineral finish.

    Food and wine pairings
    This cuvée pairs wonderfully with a seafood platter, oysters or shellfish. It also enhances grilled or meatier fish such as salmon and swordfish, as well as white meats and poultry served with a creamy mushroom sauce.

    Serving and cellaring
    To fully appreciate this Chablis 1er Cru "Vaillons" 2024, it is recommended to serve it at a temperature between 10 and 12°C. With fine cellaring potential, it can be enjoyed until around 2029.

    The estate
    Founded in 1840 by Jean Febvre, the Simonnet-Febvre House is a true historical institution of the Chablis wine-growing area, in Burgundy. Today led by Paul Espitalié, the estate has managed to preserve its independence in winemaking while relying on a prestigious distribution network. This renowned brand stands out for its respect of traditions, being notably the only one still producing Crémant de Bourgogne on the Chablis terroir. The estate also distinguishes itself by its desire to revive forgotten vineyards, embodying a perfect balance between centuries-old heritage and contemporary dynamism.

    The vineyard
    The vines that give rise to this wine flourish on the left bank of the Serein, at the heart of one of the most renowned crus of Chablis. The terroir benefits from excellent south-west exposure and rests on clay-limestone soils typical of the Kimmeridgian and Portlandian. With an average age of 35 years, this vineyard is tended with care to maintain controlled yields of around 58 hl/ha, thereby ensuring optimal aromatic concentration in the berries.

    Winemaking and aging
    The making of the Chablis 1er Cru "Vaillons" 2024 begins with a temperature-controlled fermentation in stainless steel tanks, maintained between 17 and 21°C. The wine then benefits from aging on fine lees for a period of 12 months, still in stainless steel tanks. This method brings roundness and complexity to the cuvée while preserving the purity and mineral freshness of its original terroir.
