    Tasting

    Appearance
    The wine reveals a bright pale yellow hue, enhanced by green reflections characteristic of its youth.

    Nose
    The bouquet displays great finesse, dominated by a floral profile in which delicate notes of acacia blossom come to the fore.

    Palate
    The attack reveals a perfectly balanced wine, carried by a beautiful freshness and a minerality emblematic of its appellation. The texture turns round, unfolding flavours of fresh fruit such as peach, subtly underlined by vanilla touches. The whole stretches out on a long finish of remarkable persistence.

    Food and wine pairings

    This cuvée will pair wonderfully with fish served in a creamy sauce, or with flavourful white meats.

    Serving and cellaring

    It is recommended to serve this Chablis Village "Bas de Chapelot" 2024 at an ideal temperature of 12 °C. Endowed with fine potential, it can be kept in the cellar and will be drinkable until approximately 2029.

    The elegance and minerality of a Chablis by Simonnet-Febvre

    The estate

    Founded in 1840, Simonnet-Febvre is a historic institution of Burgundy. Now owned by Maison Louis Latour and led by Paul Espitalié, it extends over a 20-hectare vineyard spread between the Chablis region and the Grand Auxerrois. A pioneer in the rediscovery of ancient grape varieties such as César, the house also stands out for its environmental commitment, with organic farming certification. It thus combines the traditional expertise of a great négociant house with viticulture that respects its terroirs.

    The vineyard

    The grapes come from the estate's original vines, ideally planted in the Bas de Chapelot sector, within the Chablis appellation. This exceptional terroir rests on a soil composed of clay and Kimmeridgian limestone. The vines, with an average age of 35 years, draw from it all the complexity and tension typical of the region.

    The vintage

    The 2024 vintage was marked by particularly demanding weather conditions. The growing cycle had to contend with major climatic hazards, alternating between episodes of frost, intense heat and hailstorms, thereby impacting the region's yields.

    Winemaking and ageing

    For the creation of the Chablis Village "Bas de Chapelot" 2024, fermentation takes place 65% in stainless steel tanks and 35% in oak barrels aged 3 to 5 years. The wine then benefits from ageing on fine lees for 15 to 18 months, retaining exactly the same proportions between stainless steel and wood.
