Founded in 2008 by Ichiro Akuto in Saitama Prefecture, the Chichibu distillery embodies the rigor of artisanal Japanese whisky. Located in Chichibu, it relies on a human-scale production setup and meticulous methods. Fermentations notably take place in mizunara vats, a rare Japanese oak that contributes to the distinctive aromatics of the house’s single malts. The distillery works with a range of maturations and cask types that showcases the precision of the Chichibu style, balancing the purity of the distillate with expressive complexity. Driven by Ichiro Akuto’s vision, Chichibu combines respect for tradition with a pursuit of singular expressions.
On the Way Floor Malted 2024 Edition: an exceptional limited-edition blend
This Japanese whisky perfectly illustrates Chichibu’s philosophy. In line with the “Floor Malted” bottlings, this cuvée highlights the care given to raw materials and the precision of fermentations carried out at the distillery, notably in mizunara vats. Crafted from floor-malted barley, this single malt is the result of a selection of casks (aged 9 to 15 years in a variety of casks) chosen for their complementarity, in order to deliver a silky texture and harmonious complexity. True to the “On the Way” spirit—namely, bottling the different stages of maturation—this spirit bears witness to a journey, step by step, toward an ever more accomplished expression of the House’s style.
