    Tasting

    Nose
    The nose reveals iconic aromas of Seville orange, beautifully complemented by rich notes of orchard fruit, stone fruit and dried fruit. With time and aeration, warm wafts of woody spice, vanilla, dark chocolate and marmalade develop, offering remarkable aromatic complexity.

    Palate
    The palate proves beautifully structured, full-bodied and slightly viscous. It opens with elegant notes of poached pears and forest berries, before evolving towards the sweetness of caramel, orange marmalade and dark chocolate. Touches of raisins, nutmeg, warm spices and a subtle coffee bitterness round out this sophisticated palette. The finish, of moderate length and great sweetness, leaves a lingering impression of orange-infused dark chocolate, rich dried fruit such as prune, and sweet spices dominated by cinnamon.

    Food Pairing Tips and Tasting Moments
    This complex spirit is best enjoyed during moments of quiet contemplation after a meal or on the occasion of formal dinners. Its notes of Seville orange, dark chocolate and warm spice make it the perfect companion to dark chocolate desserts or fruit-based pastries. For an optimal tasting experience, the distillery recommends using a tulip-shaped glass (a Copita glass). Take the time to gently swirl the liquid, breathe it in, then hold a small sip on the palate for ten to fifteen seconds. It can be enjoyed neat, on the rocks, or with a splash of fresh still water to unlock even greater complexity.

    Mixology
    Although this exceptional product is more than capable of standing on its own for a neat tasting, its aromatic richness also lends itself to sophisticated preparations that showcase the spirit, such as an elevated version of the classic Whisky Sour.

    Other Characteristics
    Bottled at 42% ABV, this spirit stands out for its unpeated, rich and fruity profile. This distinctive character comes from meticulous distillation in copper stills of varying sizes, fitted with horizontal condensers, encouraging the creation of a robust distillate built for long ageing.

    Founded in 1839 by Alexander Matheson on the banks of the Cromarty Firth in the Highlands, The Dalmore distillery is a true icon of Scotch whisky. Its identity was profoundly shaped by the Mackenzie brothers from 1867 onwards, who placed the celebrated emblem of the twelve-point royal stag on every bottle, a tribute to a Scottish legend dating back to 1263. The production facility stands out for its eight copper stills of varying capacities, creating a wonderfully rich distillate. Today, The Dalmore belongs to Whyte & Mackay, part of the Emperador Distillers Inc. group led by Winston Co.     The Art of Maturation Behind The Dalmore 17 Years Old
    Launched in January 2026, The Dalmore 17 Years Old adds a further dimension to the distillery's prestigious Principal Collection. This exceptional Single Malt slots elegantly between the 15 and 18 Years Old expressions, offering an in-depth exploration of the house's expertise in ageing.

    This whisky is crafted according to a two-stage maturation philosophy, a true technical signature of the distillery. The spirit first spends twelve years ageing in American white oak casks that previously held bourbon, giving it a soft, honeyed and vanilla-tinged foundation. It is then transferred for a further five years into a trilogy of exceptionally rare sherry casks, sourced exclusively from the reserves of the renowned González Byass bodega.

    This meticulously crafted blend brings together Apostoles casks, lending structure and woody depth, Amoroso casks for harmony and balance, as well as prestigious Matusalem Oloroso casks that enrich the profile with lingering roundness and sweetness. Presented in the brand's iconic bottle, adorned with a silver royal stag on dark glass and nestled in a luxurious purple gift box with a magnetic closure, this bottle embodies the very essence of the art of cask selection.
