Nose

The nose opens with an intense attack dominated by pineapple, crystallized ginger, cocoa, and tobacco. It then unfolds into notes of Horlicks (a vanilla malted drink), before revealing floral touches of musk, orange zest, gingerbread, cream soda, and caramel fudge, with a hint of olive.

Palate

The palate is full-bodied, with an incredibly silky, enveloping texture. It is marked by an abundance of malt biscuit, alongside black berry jam that merges with herbal notes reminiscent of vine leaf. Mid-palate brings forward fruit (peach, mango, apricot, and grapefruit juice). The finish of this unpeated whisky centers on a profusion of orange-chocolate and malt aromas. Notes of stone fruit, grape, melon, and pineapple build in a crescendo, concluding with fennel honey and chocolate fondant.

Sullivans Cove: an award-winning Tasmanian distillery

Founded in 1994 in Hobart, Sullivans Cove has established itself as a benchmark for Tasmanian whisky. After a challenging start, the distillery reached a decisive turning point in 2004 under the leadership of Patrick Maguire, the current owner backed by Anglo-American investors. Now based in Cambridge, it produces only single cask whiskies, with each cask yielding between 150 and 450 bottles. With production limited to 120 casks per year, aged in bourbon barrels or French oak, Sullivans Cove has been crowned the world’s best whisky three times (2014, 2018, 2019). In 2025, the distillery released the oldest Australian whisky ever produced: a 21 years old ultra-limited edition.

Double Cask DC0110: a blend of ten exceptional casks

Batch DC0110 represents a distinctive approach for Sullivans Cove, which typically specializes in single cask. This Double Cask is a blend of portions drawn from ten different casks, ranging in age from 7 to 20 years. This selection combines American oak ex-bourbon casks, as well as American and French oak casks that previously held Tawny, white wine, and red wine. This diversity of vessels brings remarkable complexity to the aromatic profile, creating a balance between fruity, spicy, and malty notes. Bottled at 46.9% ABV, this Australian whisky comes in a presentation case and is bottled by the distillery itself.
