Color

A pale yellow hue, luminous and bright.

Nose

The nose initially reveals subtle notes of smoky minerality and white pepper. After a few moments of aeration, the bouquet develops toward noble, earthy aromas, accompanied by refined nuances of blueberry, juniper and sloe. Hints of white flowers, white-fleshed fruit, citrus led by lemon and lime, as well as fine spicy notes round out this complex aromatic palette.

Palate

The attack is lively and refreshing, carried by a dynamic acidity. The texture is both crisp and light, with a silky feel on the palate. The wine expresses a pronounced saline, iodine-tinged minerality, characteristic of the Saar terroir, alongside herbal and briny notes. The palate’s structure favors elegance and refinement over power. Citrus flavors—especially white grapefruit and Meyer lemon—sit alongside white stone fruits such as white peach and white nectarine. Subtle herbal touches of white pepper, fennel and anise add further complexity. The finish stretches out with fine length, leaving a clean, refreshing impression with lingering mineral and herbal notes.

Food and wine pairings

This Wiltinger Riesling 2021 pairs wonderfully with seafood and shellfish, especially oysters, scallops or lobster. It also matches beautifully with spicy Asian cuisine, such as Thai curries or Sichuan dishes. Delicate poultry and fish, particularly when prepared with citrus or fresh herbs, also make excellent pairings. Roasted root vegetables and vegetarian dishes based on legumes find an ideal companion in this wine.

An elegant, mineral Riesling from the Mosel

The estate

Acquired in 2000 by Roman Niewodniczanski, from the Bitburger and Gerolsteiner families, the Van Volxem estate carries on a winemaking history dating back to Roman times. Located in Wiltingen in the Mosel-Saar-Ruwer region, the estate now spans around 85 hectares of prestigious vineyards, including several Grands Crus. Under Niewodniczanski’s leadership, Van Volxem has set itself the mission of restoring the legendary reputation Saar wines commanded at the beginning of the 20th century, when they rivaled the greatest Bordeaux châteaux. A member of the VDP, the estate stands out for its artisanal approach, favoring traditional methods and sustainable viticulture without chemical inputs.

The vineyard

Wiltinger Riesling 2021 comes from parcels located in the Wiltinger Braunfels area, in the commune of Wiltingen, in the Mosel-Saar-Ruwer region. The vines thrive on steep slopes made up of Devonian slate soils, formed around 400 million years ago. These gray slate soils, enriched with rhyolite and quartz porphyry, give the wine its signature minerality. The pronounced incline of the hillsides requires fully manual harvesting and creates optimal sun exposure, encouraging ideal ripening despite the region’s cool climate.

The vintage

The 2021 vintage in the Saar region stood out for favorable conditions that made it possible to produce wines of remarkable freshness and classic elegance. The grapes reached optimal ripeness, yielding wines with particularly pronounced mineral complexity and exceptional aromatic concentration.

Winemaking and aging

Wiltinger Riesling 2021 is made using a natural, minimally interventionist approach. Fermentation takes place exclusively with native yeasts naturally present in the vineyard and cellar, without inoculation or temperature manipulation beyond passive cooling. This extended fermentation process allows complex aromatic development. This German white wine then rests on fine lees for several months, bringing subtle textural complexity without any oaky character. True to the estate’s philosophy, the wine is neither fined nor filtered.
