Tasting
Colour
Clear and luminous, the colour reveals a lovely pale gold hue with golden and lemon-yellow highlights.
Nose
Remarkably complex, the aromatic bouquet opens with notes of white-fleshed and stone fruits, mingled with hints of citrus and acacia blossom. The whole is underscored by a characteristic minerality and subtle woody nuances.
Palate
Silky and generous, the palate captivates with its dense texture, perfectly balanced by a lively mineral tension. The long, mouthwatering finish unfolds with delicate chalky and saline notes.
Food and Wine Pairings
This white wine pairs wonderfully with a scallop carpaccio, an oily fish such as salmon, or white meats in a creamy mushroom sauce. It also works very well with a warm goat's cheese salad.
Serving and Cellaring
For optimal enjoyment, this wine should be served at a temperature between 11 and 13°C. It can be cellared and enjoyed until around 2032.
The Mineral, Refined Expression of a Great White Burgundy by Verget
The Estate
Founded in 1990 by Belgians Jean-Marie Guffens and Maine Heynen, Verget has established itself as an essential reference among négociants in Burgundy, France. Based in Sologny, the estate stands out for its exacting approach, purchasing top-quality grapes and vinifying them entirely in its own cellars. Still owned by its founders, the house is now managed operationally by Julien Desplans. Specialising in great white wines, Verget is renowned for its exceptional mastery of Chardonnay and the precision of its ageing.
The Vineyard
This wine comes from a specific plot located in the Mâcon-La Roche-Vineuse appellation. Facing due south, the old vines thrive on an extremely thin clay-limestone soil, scattered with siliceous pebbles and close to the Jurassic plateau of Somméré. Cultivated according to organic and sustainable principles, this terroir with naturally low yields promotes optimal ripeness of the berries while preserving a strong mineral identity.
Vinification and Ageing
The grapes are harvested by hand. In the cellar, they undergo a gentle, slow pressing, followed by a rigorous selection of the first press juices to ensure great purity. The long fermentation, carried out with indigenous yeasts, takes place in barrels. Ageing continues entirely in oak barrels, 25% of which are new, for around six months with very little lees stirring, thus preserving the wine's tension and freshness.
