Aromas of white pears and fresh peaches here, mingling with citrus pith and grapefruit. It’s clean, medium-bodied and precise, with a focused finish. Drink now.

The 2023 Chablis 1er Cru Fourchaume, sourced from a 3.6-hectare, clay-rich, south-facing parcel at the bottom of the slope in Vaulorent, opens with aromas of orange peel, white flowers and oyster shell. Medium- to full-bodied, the palate is fleshy yet lively, underpinned by bright acidity and concludes with a long, saline finish. This cuvée is not produced every year.

A precise and delicate Chablis Premier Cru

    The estate
Founded in 1959, the estate William Fèvre has established itself as an emblematic figure of the appellation Chablis. Integrated into the Henriot group in 1998, it embodies Burgundian rigor and expertise through a mosaic of 78 hectares of vines, of which a remarkable proportion is classified as Premier Cru (15.9 hectares) and Grand Cru (15.2 hectares).

    The vineyard
"Fourchaume" is a Chablis wine from a unique terroir, rooted in the Kimmeridgian marl-limestone soils, rich in marine fossils, particularly oyster debris, which shape the characteristic minerality of the great white wines of Bourgogne. The Vaulorent climat, located on the right bank of the Serein, covers 3.63 hectares exposed from southeast to southwest, offering ideal conditions for balanced maturation.

    The vintage

The 2023 vintage experienced a contrasting climate with a mild winter, harmless frosts, and a summer alternating between heat and rain. Despite strong sanitary pressure in June, well managed by the teams, the September harvest yielded generous volumes and grapes in excellent condition.

    Winemaking and aging

This Chablis 1er cru is produced using a gentle approach, with gravity-flow vinification without pumping and brief pneumatic pressing. After light settling, fermentations take place naturally in stainless steel tanks, followed by aging for 17 months, including 5 % to 6 % months on the lees in French oak barrels for 25 % of the cuvée. The end of the aging is carried out in stainless steel tanks.

    Grape variety

    100 % chardonnay.
