A generous Burgundy white wine of great precision
The estate
Daughter of one of the greatest winegrowing families in Burgundy, Francine Picard took over the estate historically run by her father in the late 1990s. Domaine Au Pied du Mont Chauve stretches across the villages of Chassagne-Montrachet, Puligny-Montrachet and Saint-Aubin, in the heart of the finest climats and terroirs of winegrowing Burgundy.
Driven by a desire for synergy between the land and the wines, Francine Picard cultivates her plots in accordance with the principles of biodynamics and works with passion and the utmost attention to produce wines that reflect the identity of their terroir. Grown on a 110-hectare vineyard worked using "agro-ecology", the chardonnay and pinot noir from Domaine Au Pied du Mont Chauve are renowned for their quality, precision and elegance. Since May 2019, Antoine Lepetit de la Bigne, a specialist in biodynamic viticulture, has joined the Domaine's team as Technical Director.
The vineyard
This Bourgogne Aligoté comes from the "Chat Blanc" vineyard, covering 1 hectare and whose vines, grown under organic farming, are around 40 years old.
Vinification and ageing
Traditional vinification without inputs. Alcoholic fermentation initiated with a pied de cuve, sulphiting after malolactic fermentation, adjusted if needed every 5 weeks. Ageing of 18 months on lees, including 12 months in wood (70% in Burgundy barrels, 30% in foudre) and 6 months in stainless steel tanks.
