Tasting
Nose
The aromatic bouquet opens with elegant floral notes of iris and rose, harmoniously blended with red fruit aromas such as cherry, strawberry and raspberry. Subtle herbaceous hints, black liquorice and white pepper enrich the whole, underscored by a beautiful minerality.
Palate
Fresh and perfectly balanced, the palate offers melted tannins and a fleshy mid-palate, typical of its appellation. The finish stretches out with elegance, marked by a saline minerality and delicate citrus nuances.
Food and wine pairings
This red wine pairs wonderfully with bistro cuisine, such as roast poultry with a creamy sauce, pork terrines or rillettes. It also enhances pan-fried wild mushrooms and is particularly enjoyable with soft cow's milk cheeses.

The estate
Founded in the late 2000s by the Picard family, the Au Pied du Mont Chauve estate takes its name from the famous nickname given to the hill of Montrachet. Located in the heart of Burgundy, this estate embodies a quest for excellence. Distinguished by its commitment to biodynamic viticulture, the estate has established itself as a benchmark, combining family heritage and regenerative farming practices to bring out the best of each terroir.
The vineyard
The plots dedicated to this Burgundy wine Hautes-Côtes de Beaune are perched at altitudes ranging from 290 to 485 metres, on south and south-east facing slopes. Resting on clay-limestone soils rich in marl and oolitic limestone, the vines benefit from a preserved ecosystem. The estate applies rigorous biodynamic principles, encouraging biodiversity and soil vitality through natural preparations and the grazing of herds between the rows. The harvest is exclusively manual.
Vinification and ageing
Manual harvest followed by table sorting and 100% destemming. Vinification in open temperature-controlled vats. Ageing for 15 months in large casks.
