The estate
Founded in the late 2000s by the Picard family, the Au Pied du Mont Chauve estate is an essential reference in Burgundy. Led by Francine Picard, the property cultivates 35 hectares of vines, while the family's overall holdings comprise 140. Deeply committed to environmental stewardship, the estate practises biodynamic viticulture under the technical expertise of Antoine Lepetit de la Bigne. This meticulous approach reveals the authenticity and purity of the prestigious terroirs of the Côte de Beaune.
The vineyard
This Saint-Aubin wine 1er Cru comes from a 0.50-hectare vineyard located in the lower part of the appellation. Cool and often exposed to frost, this terroir lies on soils composed of white clay earth, giving the wine freshness and suppleness.
Vinification and ageing
Manual harvest with sorting on a table followed by 100% destemming. Vinification in open, temperature-controlled vats. 15 months of ageing in 350L barrels (two-wine and older).
