    Tasting

    Appearance
    The glass reveals a beautiful pale yellow colour, adorned with bright, luminous reflections.

    Nose
    The aromatic bouquet opens with great finesse, exhaling fragrances of white-fleshed fruits and citrus. Delicate floral notes and a mineral touch enhance the whole.

    Palate
    The attack is lively and precise, revealing an ample and elegant texture. The mineral framework, typical of its terroir, stretches at length towards a saline and persistent finish.

    Food and wine pairings
    This great white wine will pair wonderfully with shellfish, a noble fish in sauce or a poultry dish in a cream sauce. It will also sublimate aged goat cheeses.

    Serving and ageing
    For optimal tasting, it is advisable to serve this wine between 11 and 13°C. Built for ageing, it can wait in the cellar until around 2033 to reveal all its complexity.

    The elegance and tension of a great white Burgundy wine

    The estate
    Daughter of one of the greatest winegrowing families in Burgundy, Francine Picard took over the estate historically run by her father in the late 1990s. The Domaine Au Pied du Mont Chauve extends across the villages of Chassagne-Montrachet, Puligny-Montrachet and Saint-Aubin, at the heart of the finest climats and terroirs of winegrowing Burgundy. With a desire for synergy between the land and the wines, Francine Picard cultivates her plots in accordance with the principles of biodynamics and works with passion and extreme attention to produce wines that reflect the identity of their terroir.

    The vineyard
    The "Pitangerets" climat is ideally located within the Saint-Aubin appellation. The vines flourish on complex clay-limestone soils, giving the wine its characteristic tension and minerality. The vineyard is managed with the greatest care, respecting biodiversity and soil health.

    Winemaking and ageing
    Hand-harvested and hand-sorted, the grapes are pressed whole. In keeping with pure Burgundian tradition, alcoholic fermentation takes place in barrels. Ageing lasts 18 months on lees, including 14 months in wood and 4 months in stainless steel tanks: 20% new Burgundian barrels, 20% in Burgundian barrels of one wine, 20% in 350L barrels of two wines and 60% in barrels of two wines and more.
