    Description

Characteristics and tasting advice for the Cannubi Riserva 2020 from Borgogno

    Tasting

    Appearance
The wine displays a medium garnet color, enhanced by ruby highlights and a translucent rim.

    Nose
The nose reveals great complexity, opening with delicate floral notes of rose petals. It then evolves towards aromas of red and black fruits such as cherry and raspberry, before unveiling mineral and tertiary hints evoking leather, tobacco, and licorice.

    Palate
Structured and generous, the palate offers firm yet silky tannins, perfectly balanced by a fine acidity. It unfolds flavors of black fruits, Morello cherry, aromatic herbs, and tea leaves. The finish is remarkably long and persistent.

    Serving and cellaring

To fully appreciate this 2020 vintage, it is recommended to decant it at least one hour before tasting and serve it at a temperature of 18°C. This wine from Piedmont can be enjoyed now but will continue to evolve favorably until around 2035.

    Food and wine pairings

This red wine pairs wonderfully with flavorful meats such as ribeye steak or lamb, as well as game-based dishes. It will also enhance a white truffle risotto, dishes with wild mushrooms, or a selection of aged cheeses such as Parmesan or Gorgonzola.

The elegance and classic structure of a Barolo wine

    The estate

Founded in 1761 by Bartolomeo Borgogno, the Borgogno estate is the oldest continuously operating winery in the appellation. Located in Piedmont, this historic property was acquired in 2008 by the Farinetti family. Now led by Andrea Farinetti, the estate perpetuates traditional production methods while modernizing its environmental approach, obtaining organic certification in 2019. Borgogno is globally renowned for its wines that combine tradition, elegance, and exceptional aging potential.

    The vineyard

The vineyard covers 52 hectares of organically farmed vines, spread across the most prestigious terroirs of the Barolo appellation, including the famous Cannubi cru. Facing south and southeast, the vines are planted at altitudes ranging from 290 to 370 meters. They thrive on soils composed of calcareous and clay marls with a slight proportion of sand, offering optimal drainage and giving these Piedmont wines a distinctive minerality.

    The vintage

The year began with a mild winter, followed by a pleasant spring with little rainfall and abundant sunshine, encouraging healthy vegetative growth. The summer season unfolded without episodes of extreme heat, allowing for slow and steady ripening of the grapes. The ideal weather conditions at the end of September and the beginning of October ensured a calm harvest at optimal ripeness.

    Winemaking and aging

After manual harvesting carried out during the second week of October, the grapes are destemmed and crushed. Fermentation begins spontaneously thanks to indigenous yeasts in large temperature-controlled cement vats for around fifteen days. This is followed by a submerged cap maceration lasting about twenty days. The wine is then aged in large Slavonian oak casks for more than 24 months, before a final period in cement vats prior to bottling.
