    Food and wine pairing

    This red wine pairs wonderfully with rich, savoury dishes such as feathered or furred game, like duck confit, pheasant or venison. It also traditionally accompanies beef bourguignon or braised white meats served with a mushroom sauce. As for cheeses, it enhances full-flavoured varieties such as Époisses, Langres or Comté.

    The estate

    Founded in 1731 by Michel Bouchard, the Bouchard Père & Fils house is a historic institution of Burgundy, based at the Château de Beaune. The estate now oversees a vineyard of approximately 98.7 hectares, spread across numerous prestigious climats. Since October 2022, the property has been owned by Artémis Domaines, majority-controlled by the Pinault family. This acquisition marks a turning point, with the house now focusing exclusively on expressing its own terroirs through an environmentally respectful approach and a conversion to organic farming.

    The vineyard

    Located in the Côte de Beaune, between the villages of Beaune and Volnay, the Pommard appellation benefits from a privileged south- and east-facing exposure. The vines thrive on a complex and varied geology. The lower slopes consist of ancient alluvium, while the mid-slope offers perfectly drained clay-limestone soils. At higher altitudes, the land is composed of Jurassic marls and brown limestone, sometimes tinged red by the presence of iron oxide, giving the grapes their unique character.

    The vintage

    2022 is recognised as an exceptional year in Burgundy, combining abundance with high quality. After a mild winter, spring brought excellent flowering conditions. A storm in late June helped replenish the soil's water reserves, preparing the vines for a particularly hot summer. Finally, a dry and windy spell just before harvest ensured perfect berry health, allowing for optimal ripening and superb balance.

    Winemaking and ageing

    To craft this Pommard Village Domaine 2022, the grapes are hand-harvested into perforated crates before undergoing rigorous manual sorting. Vinification is carried out plot by plot in small open vats, allowing for a gentle and precise extraction. The wine is then aged in French oak barrels, with a proportion of new wood carefully adapted to the characteristics of the vintage, in order to preserve the authentic expression of the terroir.
