Tasting
Colour
This Champagne is a Blanc de Noirs, the result of a gentle pressing of Pinot Noir that preserves the clarity of the juice while retaining the richness of substance characteristic of this grape variety.
Nose
After a few moments of aeration, the nose reveals delicate notes of cocoa and dark chocolate, accompanied by generous, ripe fruit, typical of Pinot Noir grown on the hillsides of the Côte des Bar.
Palate
The palate unfolds with length, fluidity and precision. A mineral freshness runs throughout, carried by a pronounced salinity on the finish, the signature of the marly terroir from which this wine originates.
Food and Wine Pairings
Largillier Millésime 2020 is an ideal companion to dishes with character: poultry, veal, mushroom dishes, mature cheeses and roasted preparations find in it an excellent partner, capable of engaging with rich, structured flavours.
Serving and Cellaring
Largillier Millésime 2020 is best served at a temperature between 10 and 12°C, preferably in large white wine glasses, allowing its depth and aromas to express themselves fully after a few minutes of aeration.
The Refinement of a Blanc de Noirs from the Côte des Bar by Champagne Coessens
The Estate
Founded in 2006 by Jérôme Coessens in Ville-sur-Arce, in the Côte des Bar, Coessens draws on five generations of family winegrowers. Now run by Jérôme Coessens, the estate farms approximately 6.5 hectares organised around a single monopole, Largillier, planted exclusively with Pinot Noir. Certified organic since 2021, the estate stands out for its highly detailed parcel-by-parcel approach, comparable to Burgundian practices, making Coessens a singular reference among terroir-driven Champagnes.
The Vineyard
This cuvée comes from the lieu-dit Largillier, a family-owned monopole located on the southeast-facing hillsides of Ville-sur-Arce. This Champagne soil, identified as Kimmeridgian marl no. 2, has characteristics comparable to the finest terroirs of Chablis. The Pinot Noir vines, around 35 to 40 years old, are farmed organically, with ploughing and controlled grass cover. This cuvée comes specifically from the "Matière" sub-plot, renowned for bringing structure and depth to the monopole.
Vinification and Ageing
Largillier Millésime 2020 is the product of a gentle pressing carried out in a Coquard press, which extracts the juice delicately and preserves the finesse characteristic of a Blanc de Noirs. The selection is made exclusively from the "Matière" sub-plot. The cuvée benefits from extended ageing on the lees, from alcoholic fermentation through to the second fermentation, followed by an Extra Brut dosage that preserves the tension and minerality of the terroir.

This Blanc de Noirs is 100% Pinot Noir.
