Description
Characteristics and Tasting Tips for Substance Grand Cru Blanc de Blancs Brut by Jacques Selosse
Tasting
Colour
This Champagne reveals an intense golden hue, a reflection of the oxidative ageing in barrels and the contribution of the wines from the solera.
Nose
The nose is highly complex, unveiling aromas of dried fruit, candied citrus and orange zest, accompanied by spicy notes and slightly toasty touches inherited from ageing in oak barrels. Mineral nuances evoking chalk complete this dense, evolving bouquet.
Palate
The attack is broad and enveloping, carried by a rich texture that gives way to incisive acidity and a fine mousse. Flavours of dried fruit and candied citrus linger on the palate, supported by a saline, mineral framework that brings tension and freshness to the whole. The finish stands out for its remarkable length, resonating with saline and spicy notes.
Food and Wine Pairings
This Champagne is ideally paired with seafood with briny flavours, such as shellfish, crab or lobster. It also works very well with white meats, particularly in indulgent preparations with cream and mushrooms. It can also be enjoyed on its own as an aperitif.
Serving and Cellaring
Substance Grand Cru Blanc de Blancs Brut is ideally served at around 8°C, in a glass wide enough to allow the bouquet to express itself fully.
A Champagne from the Côte des Blancs Driven by the Avize Solera
The Estate
Jacques Selosse is a Champagne house founded in 1949 in Avize, in the heart of the Côte des Blancs. Anselme Selosse took the helm in 1980 and profoundly renewed the house's approach to viticulture and winemaking; today his son, Guillaume Selosse, has run the estate since 2020. Having remained a family-owned, independent récoltant-manipulant, Jacques Selosse has distinguished itself through exacting viticulture and barrel vinification, making the house an essential reference among grower Champagnes.
The Vineyard
This Champagne comes from the Grand Cru of Avize, an emblematic village of the Côte des Blancs renowned for its chalky soils. These Champagne plots benefit from biodynamic viticulture and are planted with Chardonnay on chalky soils that promote freshness and minerality in the grapes.
Vinification and Ageing
Substance Grand Cru Blanc de Blancs Brut is produced using a solera system, a method of perpetual ageing rarely used in Champagne. The base wines are aged in oak barrels, which lend them a rich texture and distinctive aromatic complexity, the result of a deliberate oxidative ageing.
Grape Variety
This Brut Champagne is made from 100% Chardonnay.
