    Tasting

    Appearance

    With its deep golden hue, this champagne is enhanced by a particularly fine effervescence.

    Nose

    Beautifully complex, the bouquet evolves in the glass, releasing notes of dried fruit and honey. As it opens up, subtle minty fragrances emerge, bringing freshness and complexity.

    Palate

    A balanced, fruity attack (dried fruit, apricot jam) leads into a palate of lovely freshness.

    Food and Wine Pairings

    This wine pairs wonderfully with seafood and shellfish such as lobster or scallops. Its structure also allows it to accompany characterful dishes such as game, truffle-based dishes or caviar, as well as soft or aged cheeses like a mature Comté or Parmesan.

    Serving and Cellaring

    To reveal its full aromatic range, it is recommended to decant this Clos des Goisses "L.V." 2000 before serving. This wine has reached its peak and can be enjoyed now, while still offering ageing potential until around 2032.

    The Richness and Minerality of a Terroir Champagne

    The House

    While the family's winemaking history dates back to 1522, the House of Philipponnat was officially founded in 1910. Located in Mareuil-sur-Aÿ, in the heart of the Marne Valley, the estate stands out for its artisanal approach and respect for the environment, and is certified HVE and VDC. Now run by Charles Philipponnat, the House looks after a vineyard of around twenty hectares. Renowned for its single-plot cuvées and its use of the solera method, it embodies family continuity and the enhancement of unique terroirs across the centuries.

    The Vineyard

    Covering 5.83 hectares, the Clos des Goisses is an iconic vineyard in Champagne. Entirely enclosed by walls, it is distinguished by its extreme slope, reaching 45 degrees, and its soil of pure belemnite chalk. Its full south-facing exposure makes it one of the warmest terroirs in the appellation. The estate favours sustainable viticulture, using no insecticides or chemical weedkillers, and relies on mechanical soil cultivation and horse ploughing on the steepest plots. The "L.V." designation stands for "Long Vieillissement" (long ageing).

    The Vintage

    A warm winter and spring gave way to a cool start to summer, punctuated by regular rainfall. Optimal conditions at the end of summer were followed by a warm, sunny autumn.

    Winemaking and Ageing

    Made exclusively from first-press juice, the Clos des Goisses "L.V." 2000 was vinified entirely in stainless steel tanks, without malolactic fermentation, to preserve all its freshness. The wine then underwent extended ageing on the lees for around 25 years in the estate's cellars, before being disgorged in March 2025.

    Grape Varieties

    This wine is a blend of Pinot Noir (61%) and Chardonnay (39%).
