    The estate

    Founded in 1920 and led by Monsieur Aimé Salon, the family-owned Champagne Salon House is now part of the Laurent-Perrier group. Today, Maison Salon continues to share its ambitions and resources with its neighboring house: Delamotte. At the helm are Monsieur Didier Depond and the talented cellar master, Michel Fauconnet. Salon stands out by creating a single cuvée, made exclusively from Chardonnay, sourced from a single terroir in Champagne (La Côte des Blancs), a single cru (Le Mesnil-sur-Oger), and a single outstanding vintage year.

    Produced only in the greatest years, Salon is an exceptional champagne whose every new release is a true event.

    The vintage

    The great winter chill, accompanied by frost, was offset by a milder March. April brought renewed episodes of frost along with significant and persistent rainfall lasting through July. This high humidity, impacting flowering and vegetative growth, was followed by a scorching early August. Harvest began on September 17, yielding grapes of outstanding quality that, despite these challenging conditions, reveal beautiful acidity and remarkable potential.

    This 2012 vintage champagne is 100% Chardonnay.

    Tasting

    Appearance
    The wine displays a beautiful pale gold color, adorned with subtle green reflections.

    Nose
    Mineral, the nose combines chalky notes with fruity fragrances and hints of dried rose petals.

    Palate
    The palate charms with its length, freshness, and vibrant acidity. Throughout the tasting, aromas of pineapple and lychee mingle with smooth, smoky notes.

    Food and wine pairings

    Thanks to its purity and minerality, this Salon 2012 pairs perfectly with a variety of refined dishes. Langoustine tartare, scallops marinated in kombu, imperial Daurenki caviar, miso-roasted turbot, or a fillet of Corrèze milk-fed veal with white asparagus and morels are all delicious pairing suggestions.

    Serving

    For optimal tasting, serve between 13 and 15°C (55–59°F).

    Cellaring
