    Description

Characteristics and Tasting Tips for Champagne Savart Écueil-Trépail Blanc de Blancs Extra Brut

    Tasting notes

    Appearance
The colour is a crystal-clear pale gold, enhanced by an exceptionally fine effervescence.

    Nose
The bouquet is remarkably pure, blending citrus fragrances such as lemon and grapefruit with delicate notes of white flowers. With aeration, richer aromas of brioche, vanilla and praline unfold, supported by a chalky minerality.

    Palate
The attack is straight and vibrant, offering a texture that is both creamy and nervy. The palate shows beautiful zesty tension and fresh fruit flavours, stretching into a persistent, saline and subtly spiced finish.

    Food and wine pairings

This Écueil - Trépail Blanc de Blancs Extra Brut pairs wonderfully with seafood such as oysters or langoustines, as well as with Japanese cuisine such as sushi. It also elegantly accompanies poultry in cream sauce or dishes that showcase root vegetables.

    Serving and cellaring

To fully enjoy the non-vintage Écueil - Trépail Blanc de Blancs Extra Brut, serve it at 9 to 10°C, ideally in a wide-based glass to encourage quick aeration. This wine can be enjoyed now, but it has the structure needed to evolve favourably in the cellar until around 2032.

    A Vibrant and Expressive Champagne

    The estate

Founded in 1947 by René Savart in the aftermath of the Second World War, the family-run estate Savart is now led by Frédéric Savart. Located in the Montagne de Reims, this 4-hectare estate stands out for its artisanal approach and its philosophy of signature wines. In 2001, Frédéric broke away from the cooperative model to create his own Champagne house. Favouring low dosages and oak vinification, Savart crafts cuvées of great precision that authentically express the richness of their terroirs.

    The vineyard

The grapes come from two villages classified as Premier Cru at the opposite ends of the Montagne de Reims in Champagne: Écueil and Trépail. The vines, cultivated according to organic farming principles, thrive on east- and southeast-facing slopes. The soils consist mainly of Campanian chalk, white marl and calcareous sands, giving the berries a distinctive mineral identity. Yields are deliberately limited to ensure optimal concentration.

    The blend

This non-vintage cuvée was born of a weather event in 2021 that led to particularly low yields. To cope with this, the winemaker decided to blend equal parts of Chardonnay from the Écueil terroir and from Trépail.

    Vinification and ageing

The Écueil - Trépail Blanc de Blancs Extra Brut non-vintage is vinified and aged in large 500-litre oak casks. The wine then benefits from a long rest on lees in bottle of more than three years, refining its effervescence and developing its aromatic complexity before disgorgement.

    Grape variety

This Blanc de Blancs is 100% Chardonnay.
