    This red wine pairs wonderfully with roasted or grilled red meats such as beef, lamb or pork, as well as with dishes in sauce. It also perfectly accompanies feathered or furred game, and pairs ideally with characterful cheeses such as Époisses.

    The elegance and structure of a great Burgundy wine from Maison Champy

    The estate

    Founded in 1720, Maison Champy is the oldest wine house in Burgundy still in operation. Located in the heart of Beaune, France, it embodies three centuries of history and innovation. The estate oversees a vineyard of approximately 21 hectares spread across the prestigious Côte de Beaune. A pioneer in environmental practices, the estate is certified organic and biodynamic. Since October 2023, the AdVini group has been the current owner of the house, while retaining the historic technical expertise to guarantee the authentic expression of each terroir.

    The vineyard

    The Grands Epenots terroir is located in the northern part of the commune of Pommard. This plot rests on shallow soils, rich in clay and limestone, dotted with limestone rocks on the surface. The subsoil, particularly dry compared to other sectors of the appellation, forces the vine to draw its nutrients from deep down, giving the grapes remarkable quality and producing wines of great finesse.

    The vintage

    The year 2011 was characterised by an early growing cycle, with both the start and end of the season ahead of schedule. A gloomy summer intervened during the summer period. These weather conditions produced a harvest offering well-ripened tannins and more moderate acidity, particularly successful in this geographical sector.

    Winemaking and ageing

    For this Pommard 1er Cru "Grands Epenots" 2011, fermentation takes place in vats or wooden vessels over a period of up to four weeks, using exclusively indigenous yeasts. Extraction is carefully controlled through punching down and pumping over. The wine then undergoes traditional ageing in Burgundian oak barrels for twelve to fifteen months, with a proportion of new oak generally not exceeding 30%.
