    Tasting

    Color
    The color is a radiant pale gold with green highlights.

    Nose
    The bouquet is elegant and open, revealing notes of fresh fruit such as lychee, accompanied by a delicate floral note reminiscent of honeysuckle and orange blossom.

    Palate
    The attack on the palate is fresh and rich at the same time, harmoniously combining creaminess and roundness. The finish is characterized by a beautiful aromatic persistence. This wine possesses the character of a small Meursault.

    Food and Wine Pairings

    This cuvée can be enjoyed as an aperitif or elegantly accompanies a fish tartare with fresh herbs, grilled mussels, a fish matelote, seared scallops or goat cheeses such as Cabécou, Rocamadour or Aisy Cendré.

    Service and Storage

    The Bourgogne Chardonnay "Cuvée Edme" 2023 should be served chilled, at a temperature between 12 and 15°C. This wine can be cellared until about 2029.

    A Burgundy white wine that combines minerality and fruity richness

    The Estate

    Maison Champy was founded in 1720 by the cooper Edme Champy in Beaune and is the oldest wine house in Burgundy. Since 2016, it has belonged to the AdVini group and manages around 29 hectares of vineyards, committing to organic and biodynamic farming under the direction of oenologist Dimitri Bazas.

    The Vineyard

    This white wine from Bourgogne comes from plots in Pernand-Vergelesses, Meursault and Rully. The vines thrive on the clay-limestone soils characteristic of the region. This plot selection allows combining the typical minerality of Côte d'Or Chardonnays with the fruity generosity of the Côte Chalonnaise.

    The Vintage

    The 2023 vintage is characterized by late budburst at the end of March for Chardonnay and early April for Pinot Noir. This year produced fruity and supple wines that show beautiful freshness in both white and red wines.

    Winemaking and Aging

    The Bourgogne Chardonnay "Cuvée Edme" 2023 is produced following traditional vinification with natural yeasts and complete malolactic fermentation. Aging lasts 10 months and takes place 25% in oak barrels and 75% in stainless steel tanks. Bottling takes place on a fruit day according to the biodynamic calendar.
