    Tasting notes

    Appearance
    This wine reveals a deep garnet colour, enhanced by brilliant violet highlights.

    Nose
    The aromatic bouquet proves to be of great delicacy, exuding floral scents of rose and violet. These intertwine with alluring notes of fresh, crisp fruit, reminiscent of blueberry and blackcurrant bud.

    Palate
    The attack reveals a profile that is both rich and perfectly balanced. The elegant texture is accompanied by a lovely minerality and subtle spicy touches, extending into a finish of great delicacy, marked by a pleasant salinity.

    Food and wine pairings
    This cuvée will pair beautifully with flavourful meats and game, such as duck breast with a blackcurrant sauce, medallion of venison with cranberries, or quail stuffed with foie gras. A beef stew with grapes or a fine selection of matured cheeses will also enhance this wine.

    Serving and cellaring
    To fully appreciate this Beaune 1er Cru "Aux Cras" 2023, it is recommended to serve it at a temperature of between 15 and 16°C. Boasting fine ageing potential, it can be cellared and enjoyed until around 2033.

    The mineral elegance of a great Beaune from Champy

    The estate
    Founded in 1720, Maison Champy is the oldest négociant house still in operation in Burgundy. Located in the heart of Beaune, it farms an estate of around twenty hectares concentrated on the Côte de Beaune. Now owned by the AdVini group, this historic institution has managed to preserve its identity and its name while becoming a pioneer of organic viticulture in the region. Recognised by the Entreprise du Patrimoine Vivant label, it brilliantly combines centuries of heritage, unique cellars within the town walls and a resolutely contemporary demand for quality.

    The vineyard
    The grapes behind this wine come from the "Aux Cras" climat, ideally situated on the left side of the Montagne de Beaune. The vines flourish at an altitude of 250 metres, benefiting from a fine east and south-east facing exposure. This terroir stands out for its clay-limestone soils, particularly rich in stones, which promote excellent drainage and give the wine its characteristic tension.

    Winemaking and ageing
    Made exclusively from estate-grown grapes, the Beaune 1er Cru "Aux Cras" 2023 undergoes a cold maceration before fermentation carried out with natural yeasts. Vatting extends over four weeks for a gentle extraction. Finally, the wine is aged in six oak barrels, including a proportion of 25% new oak, to bring complexity without masking the fruit.

    This cuvée is made from 100% Pinot Noir.
