Description
An aromatic and structured Grand Cru from Saint-Émilion
The estate
The Château Bellevue Mondotte is a Grand Cru of the Saint-Émilion appellation, whose 2-hectare vineyard is partly enclosed within the grounds of Château Pavie Decesse.
The vineyard
Located on the clay-limestone plateau of Saint-Émilion, at 80 metres above the Dordogne valley, this terroir, with vines averaging 51 years of age, benefits from an ideal south-facing exposure, sloping soils that promote excellent natural drainage, and a vineyard that is little affected by frost thanks to its geographical position.
Winemaking and ageing
Harvested by hand, the grapes undergo a rigorous sorting process before being vinified. Alcoholic fermentation takes place in temperature-controlled wooden vats. Malolactic fermentation is carried out in barrels, as is the ageing process (90% new barrels and 10% one-wine barrels), with the final blending taking place just before bottling.
