    Tasting

    Nose

    A subtle and elegant Saint-Émilion

    The property

    Nestled on the limestone plateau of Saint-Émilion, Château Canon has been writing its history since 1760, when the corsair Jacques Kanon became its owner. Acquired by Maison Chanel in 1996, the estate has since undergone extensive restructuring, both of the vineyard and the infrastructure. Classified as a Premier Grand Cru of Saint-Émilion, it has been managed since 2015 by Nicolas Audebert, who is also in charge of Rauzan-Ségla for the Chanel group. Château Canon today embodies one of the major references of its appellation, praised for the finesse and elegance of its wines.

    The vineyard

    Spread over 32 hectares, 20 of which are in one piece, the Château Canon vineyard occupies a privileged position on the limestone plateau of Saint-Émilion, facing south/southwest. Located at 87 meters above sea level, it benefits from excellent natural ventilation, while the ancient walls that border its plots offer valuable protection against spring frosts.

    The vintage

    A very cold and rainy winter was followed by a cool and damp spring. The summer was mild but stormy, while the fall saw heat spikes in September followed by rains in October. These conditions required constant vigilance in the vineyard. The harvest took place from October 1st to 10th, with the merlots harvested first, followed by the cabernet francs.

    Vinification and aging

    The vinification of Château Canon 2013 is carried out plot by plot in thermoregulated stainless steel truncated vats, with gravity feed. Malolactic fermentation is carried out for a third in new barrels and two thirds in vats. The aging extends over 18 months in French oak barrels with medium or medium-long toast, 70% of which is new wood.

    Blend

    Château Canon 2013 is composed of 65% merlot and 35% cabernet franc, a typical blend of the great wines of Saint-Émilion that combines the roundness and fruit of the merlot with the structure and aromatic elegance of the cabernet franc.
