    Tasting

    Color
    Displaying beautiful intensity, this French wine reveals a deep red color with dense, brilliant ruby highlights.

    Nose
    Discreet in its youth, it gradually opens onto a complex bouquet of fresh red fruit, dominated by cherry and morello cherry. Delicate floral touches intertwine with spicy notes of white pepper and mint, underscored by subtly integrated oak.

    Palate
    The attack is direct and precise, revealing an ample texture with great freshness. The tannins, perfectly melted and silky, lend the whole remarkable elegance. The finish stretches out at length, leaving behind flavorful notes of licorice and ripe red fruit.

    Food and Wine Pairing

    This wine pairs wonderfully with braised red meats, such as Charolais beef chuck with mushrooms and bacon, or roasted meats. It will also beautifully complement traditional specialties such as coq au vin, Burgundy-style snails or veal kidneys.

    Serving and Cellaring

    To fully appreciate the Mercurey 1er Cru "Les Cinq" 2023, it is recommended to serve it at a temperature of between 15 and 16°C, after decanting for thirty minutes to two hours. Boasting a fine structure, this wine offers excellent aging potential and can be cellared until around 2038, or even beyond for the most well-balanced bottles.

    The Elegance and Complexity of a Great Mercurey Wine

    The Estate

    Built in the early 18th century on a rocky outcrop, the Château de Chamirey's true winemaking history began in 1932, driven by the de Jouennes family. Located at the heart of Burgundy, this iconic estate is now run by the fifth generation, represented by Amaury Devillard and his sister Aurore Monot-Devillard. Built on values combining tradition and innovation, the estate has established itself as an essential reference. It embodies the excellence of its appellation through an environmentally respectful approach and a constant pursuit of precision.

    The Vineyard

    As the largest landowner in the Mercurey appellation, the estate oversees a 37-hectare vineyard, 15 hectares of which are classified as premier cru. The vines, around 35 years old, thrive on a mosaic of terroirs with varied soils, combining shallow limestone, marl and deep clay. The entire vineyard is farmed using sustainable practices, reflecting a strong commitment to preserving ecosystems and environmental sustainability.

    The Vintage

    The year 2023 stood out for its exceptional climatic conditions. Although particularly high temperatures were recorded, the season was marked by overall moderation. Heat waves at the end of August and beginning of September allowed the grapes to reach optimal ripeness. The vines thus yielded a generous harvest, characterized by a perfect balance between sunlight and water reserves.

    Winemaking and Aging

    The grapes are harvested by hand, followed by rigorous sorting. The winemaking of the Mercurey 1er Cru "Les Cinq" 2023 incorporates around 10% whole clusters. After a few days of cold pre-fermentation maceration, alcoholic fermentation begins through the action of indigenous yeasts, accompanied by regular punching down and pumping over. The wine is then aged for 12 to 15 months in Burgundian oak barrels, 70% of which are new, before finishing with a three- to four-month resting period in stainless steel tanks.
