    Colour
    The colour reveals a deep golden yellow hue, subtly illuminated by delicate green highlights.

    Nose
    The bouquet opens with generous aromas of juicy white fruits, reminiscent of peach and pear, nuanced by a light touch of pineapple. With aeration, it reveals lovely aromatic complexity blending floral notes, touches of almond and vanilla, along with a minerality evoking flint.

    Palate
    The attack is bright and precise. The palate offers a lovely balance between refreshing acidity and round, enveloping fruit. The silky texture is accompanied by a hint of salinity and subtly spiced, oaky notes, extending into a long, lingering finish.

    Food and Wine Pairing

    This white wine pairs perfectly with firm-fleshed fish such as cod or roasted salmon, as well as seafood and shellfish. It also goes very well with lightly spiced Asian dishes, grilled white meats, poultry, or cheeses such as Comté and Morbier. It can also be thoroughly enjoyed as an aperitif.

    The Freshness and Minerality of a White Wine from Mercurey

    The Estate

    Built at the beginning of the 18th century in Burgundy, the Château de Chamirey truly began its winemaking history in 1934, when estate bottling was introduced by the Marquis de Jouennes d'Herville. Located in the Côte Chalonnaise, this estate now spans 37 hectares, making it the largest domaine in its appellation. Currently run by Amaury and Aurore Devillard, the estate stands out for its environmentally responsible approach and its commitment to producing wines that faithfully reflect the richness of their terroirs.

    The Vineyard

    This wine comes from the Mercurey appellation, more specifically from the "En Pierrelet" terroir. The vines, planted in 1990, extend over a small terrace of about one hectare located just behind the château. South-east facing, they benefit from a clay-limestone soil dominated by limestone and covered with small white stones on the surface. The vineyard is managed using sustainable farming practices with a high planting density of 10,000 vines per hectare, in keeping with local tradition.

    The Vintage

    The year 2023 was marked by particular weather conditions that gave the berries naturally high acidity levels, preserving great freshness.

    Winemaking and Aging

    The grapes intended for the Mercurey Village "En Pierrelet" 2023 are hand-harvested at optimal ripeness, then carefully sorted. After gentle pneumatic pressing and overnight settling, alcoholic fermentation takes place using indigenous yeasts, entirely in 400-litre barrels (30% new oak). A complete malolactic fermentation then follows. Aging continues in barrels for about 10 months, before a final 3-month refinement in stainless steel tanks prior to bottling.

    This wine is made exclusively from Chardonnay.
