Description
Characteristics of the Clos Vougeot Grand Cru 2025 from Château de Marsannay
Food and wine pairing
This Grand Cru pairs ideally with roasted or grilled red meats, as well as game birds such as guinea fowl or partridge. It is also a fine match for slow-cooked dishes in sauce, made with beef or veal and mushrooms, and can be enjoyed with aged soft-rind or pressed cheeses.
A Clos Vougeot Grand Cru from the Côte de Nuits by Château de Marsannay
The estate
The Château de Marsannay is an estate built in 1990 in Marsannay-la-Côte, at the gateway to Dijon in Burgundy, at the start of the Route des Grands Crus. Acquired in 2012 by Olivier Halley, the estate now extends over 40 hectares farmed organically, with Ecocert certification since 2022. Château de Marsannay combines the promotion of the Marsannay terroirs with the production of several grands crus from the Côte de Nuits, including Clos de Vougeot, and offers educational wine tourism centred on biodiversity and Burgundy's climats.
The vineyard
The Clos Vougeot from Château de Marsannay comes from a 21.4-are plot located at the foot of the slope, on a gentle east-facing incline. The clay-limestone soil, rich in brown gravel, is farmed according to the organic principles applied across the estate's entire vineyard, with pruning that respects the flow of the sap and organic amendments that encourage microbial life in the soil.
Winemaking and ageing
The Clos Vougeot Grand Cru 2025 is crafted according to the estate's minimal-intervention winemaking principles, with whole clusters placed in vat for the finest sections of the plot, followed by a two- to three-week maceration that favours gentle extraction through infusion and light pump-overs. Ageing takes place in oak barrels, in an underground cellar temperature-controlled at 15°C, where malolactic fermentation unfolds under stable conditions.
Grape variety
This Grand Cru is made from Pinot Noir, the only grape variety permitted in the Clos de Vougeot Grand Cru appellation.
