    Tasting

    Appearance
    Bright and luminous, the wine reveals delicate hues reminiscent of lychee.

    Nose
    Expressive and generous, the bouquet opens with a fruity palette combining citrus, exotic fruits, and small red berries.

    Palate
    The attack is broad and silky, giving way to a full-bodied palate with persistent aromas of citrus and exotic fruits. The structure is solid, supporting a long and flavorful finish.

    Food and wine pairings

    Ideal as an aperitif, this rosé pairs perfectly with a poké bowl combining salmon, shrimp, avocado, and grapefruit, a melon de Lectoure served with jambon de Bayonne, or even a sea bream ceviche and plancha-grilled sea bass.

    Service

    For an optimal tasting experience, serve chilled, between 48 and 52°F.

    The estate

    Located in the heart of the Côtes de Provence appellation, Maison Gassier embodies viticultural excellence and Provençal authenticity.     The terroir

    Sourced from plots located within the Côtes de Provence Sainte-Victoire appellation, Pas du Moine is made from vines rooted in clay-limestone soils, ensuring remarkable balance and freshness.

    Winemaking and aging

    The grapes are harvested at night to preserve their freshness. Direct pressing for 2 to 3 hours is carried out, followed by cold settling for one week. Fermentation then takes place in concrete vats to preserve the wine’s aromatic purity.

    Syrah, grenache, cinsault, and rolle.
