    Description

    A great wine from Saint-Émilion by Château Pavie

    The estate

    The estate’s origins date back to ancient times. Vines have been cultivated on the slopes of what is now the Château Pavie since the 4th century. Owned by Chantal and Gérard Perse since March 1998, Château Pavie, 1er Grand Cru Classé « A », has one of the finest terroirs in Saint-Émilion.

    Château Pavie is renowned for the structure and elegance of its wines resulting from a harvest limited to yields best suited to the terroir: 31hl/ha.

    The vineyard

    Château Pavie’s vineyard is made up of a single block of 37 hectares making it one of the largest Premiers Grands Crus Classés in Saint-Émilion.

    Located southeast of the hill of Saint-Émilion, the vineyard extends over three levels as it climbs the slope, with vines aged 49 years on average. The “plateau” (85 meters altitude) consists of clay-limestone soil above the Astéries limestone and the “middle slope” (55 meters altitude) consists of fine-textured brown clay-limestone soil. The “foot of the slope” is composed of sandy / sandy-clay soils with an iron pan between 60 and 80 cm and sandy-gravelly soils.

    Particular attention is paid to the vineyard, part of which has undergone a replanting plan including the raising of the trellising to increase leaf surface area, specific pruning according to vine age, thinning and leaf removal.

    Winemaking and aging

    Hand-harvested and sorted, the grapes are received in 21 temperature-controlled wooden vats. After a 38-day maceration, malolactic fermentation takes place in barrels, as does the aging. The allocation is 75% new barrels and 25% one-wine barrels.

    Blend

    Château Pavie 2020 is a blend of merlot (50%), cabernet franc (34%) and cabernet sauvignon (16%).
