Description
The elegance of a Red wine from Saint-Émilion signed Château Pavie-Décesse
The estate
The Château Pavie-Décesse is a Grand Cru Classé of the Saint-Émilion appellation with a vineyard covering 3.65 hectares. The vines, averaging 52 years old, are planted on the limestone plateau of Saint-Émilion, characterized by clayey-limestone soil over the Astéries limestone.
Vinification and aging
Suited to the strict potential of the harvest, the vinification of this wine from Saint-Émilion takes place in temperature-controlled wooden vats. Malolactic fermentation takes place in barrels, as does the aging (80% new barrels and 20% one-wine barrels).
Blend
Château Pavie-Décesse 2020 is produced from a blend of Merlot (88%) and Cabernet Franc (12%).
