    A lively and vibrant rosé wine from the Côtes de Provence

    The estate

    Founded by the Order of the Knights Templar in the 13th century and later entrusted to the Order of the Knights of Malta, the Domaine Peyrassol has, over the vintages, become a benchmark in crafting great wines from the Côtes de Provence.

    In 2001, Philippe Austruy acquired the estate, thus continuing its ancestral history. This passionate owner undertook major vineyard restructuring and winery modernization from 2002 onwards, aiming to excel in producing cuvées that reveal the full quality of their terroir. Vines managed under Organic Farming practices, sowing cereals between rows, developing soil life, parcel selection, manual harvesting on the oldest plots… all reflect the meticulous care given to the vineyard to bring out its very best.

    The vineyard



    Château Peyrassol rosé is a Côtes de Provence wine made from parcel selections, notably from old vines with low yields planted on Triassic clay-limestone soils with a high proportion of pebbles.

    The vintage

    The 2025 vintage was marked by a cool, wet winter, a very rainy and stormy spring, followed by a hot summer punctuated by two heatwaves that accelerated ripening and brought forward the harvest, especially along the coast, while inland areas experienced more heterogeneous harvests depending on soil water reserves.

    Winemaking and aging

    The grapes undergo gentle pneumatic pressing before juice separation. Vinification takes place in temperature-controlled stainless steel tanks. Fermentations are followed by a light racking to retain only the highest quality lees, enhancing the expression and aromatic potential of this cuvée throughout its evolution.

    Blend

    Château Peyrassol 2025 is a blend of cinsault, grenache, syrah, mourvèdre, and tibouren.
