    Tasting

    Colour
    The colour reveals a brilliant golden hue, at once pure, luminous and very pale.

    Nose
    Refined and elegant, the nose reveals a nuanced palette in which honeyed notes of acacia intertwine with subtle hints of Bourbon vanilla.

    Palate
    From the outset, the wine reveals a velvety texture before giving way to superb tension. The palate unfolds complex aromas of citrus and pear, elevated by a delicate saline minerality. The whole offers a perfect balance between freshness and generosity.

    Food and wine pairing

    This white wine pairs beautifully with seafood such as grilled red mullet, seared scallops or an herb-crusted tuna steak. It also enhances full-flavoured meats such as matured rib of beef or game stew, as well as ripened cheeses like truffle brie or sheep's milk cheese.

    Service and storage

    To fully appreciate the aromatic finesse of "L'Excellence" 2024, it is recommended to serve it very chilled, at a temperature between 6 and 8°C. This wine can be enjoyed now or cellared for a few more years.

    The elegance and minerality of a great white wine from Provence

    The estate

    Built at the end of the 19th century on the grounds of a former monastery, the Château Saint-Maur stands as a key reference in Provence. Recognised as a Cru Classé since 1955, this jewel of the Gulf of Saint-Tropez was acquired in 2011 by entrepreneur Roger Zannier, its current owner. Under the direction of his son-in-law Marc Monrose, the estate now combines respect for tradition, sustainable farming and cutting-edge technological innovation to produce exceptional cuvées, recognised at some of the world's finest tables.

    The vineyard

    Nestled on the foothills of the Massif des Maures, which shelter it from northern winds, the estate spans around a hundred hectares, seventy-five of which are classified under the Côtes de Provence appellation. The vines benefit from an ideal south-easterly exposure and thrive on clay-limestone soils rich in schist and quartz. The estate is currently undergoing conversion to organic farming.

    Winemaking and aging

    The grapes destined for the "L'Excellence" 2024 cuvée are hand-harvested at night to preserve their freshness. In the cellar, vinification takes place at low temperature with cold maceration to protect the delicate aromas of the fruit. Finally, a quarter of the blend is aged in barrels, adding subtle woody complexity without masking the purity of the grape variety.
